Hey all, Im wondering if there is any diffrence visually or sound wise between the 3.5mm cable and the standard 3 jack set?
In my experience, 15kHz video is pretty indifferent to different connectors and plugs (1/8" TRRS, BNC, RCA, etc). As long as your co-ax cable is decent stuff, and the number of connections (i.e. joining multiple cables together, cascading switch boxes, stuff like that) is kept to a minimum, you probably won't notice a difference. High-res VGA (like 1024x768 upwards) is a different story.
3.5mm isn't composite, it's a stereo audio connector. There were a few smaller devices (e.g. Game Gear TV tuner) that used it for video, but it's designed for audio. You really need to elaborate on what you mean, there. By the 3 jack set, I assume you mean a composite AV lead, which has a phono composite connector and two phono connectors for stereo audio. It's an improvement over RF, but will give you far from the highest picture quality. You're better off using s-video or preferably RGB (if you have a device that supports 15 kHz RGB), although some consoles use component, HDMI or even VGA for decent quality picture. If only due to the type of cable used, a 3.5mm lead won't ever deliver great video.

It just seems to be an inferior way to mod a system.
I don't see there being a discernible difference between this cable and three separate ones, at least with a composite signal. That is, unless the cable is really, truly crappy/garbage.
This is what I'm doing with my famicom mod (except I'm using a 3.5mini jack to two phono plugs - Comp. Video + Mono), I didn't think that it would make much of a difference as the jack and cables are not audio specific and all you're doing just is carrying a signal the same as RCA?
I don't think there is any interference to worry about, a lot of Camcorders utilize the "stereo" plug for composite feeds. If there is room in the console mod, RCA jacks are more durable. Phono jacks sometimes lose one of the connections inside, especially if repeatedly unplugged.
