My problem with the Pi is that the OS's like Raspbian come with way too much crap and I just can't get the non-official minimal images to work at all.

I'll definitely give it a nosy but my problem with Hexxeh's image is that even after using win32imager like the guide suggests [and following it] the Pi will not boot, and stays with the red (off the top of my head) LED.

You should use dd instead of win32imager, it's available on windows via cygwin. When nothing happens (black screen with red led lit) it's often because the psu can't cope for some reason. On a side-note, I just added my first GPIO button to my xbian pi, it does shutdown when pressed!

I do think its a problem with the way the image is mounted to the SD card, not sure why the PSU would crap out considering theres no difference between the PI when it uses the normal raspbian image and the Minimal one, but Im not with a pi right now so Ill try soon

I have tried kweb and web (Minimal Kiosk Web browser) but didn't have much luck. Iceweasel seems to run it best but still a tad too slow. I run xinit iceweasel from terminal
The only thing it doesn't seem to detect the screen size properly, uses half of it

Weston still doesn't have a browser that I could find to install but it does seem a lot smoother

Before the Pi I played with the Wii linux and set up samba shares and got the wireless working using some guide I found online.
