There's not really a whole lot to it one would think, I have had multuple Gamecubes where the eject button sticks, I took it apart cleaned everything and reassembled, yet it still sticks. Is this something to do with maybe the spring has lost tension? It seemed ok while it was out. Also no matter what the button never lays flat always slightly angled which I think is part of the reason why it gets stuck. Figured this was a simple enough of a thing to ask as my first question here lol. Any tips? How could something so simple be such a pain?

Have seen this before, typically giving the button where it makes contact with the case (ie that narrow piece that sits in the channel that moves that unlocks the lid) a bit of a "lube'ing" with something like Tamiya ceramic grease (RC car stuff) or the like fixes it right up. Don't use oil or WD40 or any of that shit, keep it to Lithium type or the ceramic grease.

Yes I do, get a game bit, a sink and some soap. Now remove the top of the system, disassemble the eject mech. Throw it all into the sink, do the obvious.

You can also use silicone grease when lubricating plastic parts. You can often find small containers of it in the plumbing section of small hardware stores so its easy and quick to get and is very good stuff.
