I just had my mind going about how much space av mods take with the huge 3 connectors. So I thought why not start using 3.5mm cables/connectors? http://www.pccables.com/images/CAMCORDER_AV_CABLE_35mm_JACK_M_TO_3_RCA_M_6FT.jpg it would cut down on a ridiculous amount of space. I realize the point of the av mod can be kind of mute since it's not exactly a common cable. But they aren't uncommon either, and are definitely cheaper than official cables too. Thoughts?

Yes, you can use those cables fine for composite and stereo audio. Make sure you press the jack in fully before turning on your console first or your contacts will be going to the wrong places.
It'll degrade the quality somewhat and be less sturdy and prone to breakage, hence why people go for the proper connectors quite often. Better still - use RGB or s-video where possible, rather than composhite.
