I was just wondering if, apart from language. There was any difference in any of the different Smash bros from the PAL variant. I'm mainly thinking between PAL and NTSC/NTSC-J and just to confirm this is down from the N64 version up too the Wii U. Thanks :).

Well on the GC the NTSC games will support progressive 480p output as well as 480i, unlike the PAL version which has 576i and 480i (called 60hz mode)

The western versions of the original SSB, as well as the PAL version of Melee, apparently had some balancing changes, while the former also had sound effect changes (attack/hit sounds). That aside, all of them had various translation differences, including Brawl having changes between the US English and the PAL English version. 3DS/Wii U also has such US/PAL English differences, I believe.

Not 100% sure about the extend of any of those myself, but TCRF has more details, see the links.

Thanks guys. I was hoping there would be like something extra in the NTSC-J version of Brawl but it looks like the best it can offer is a demo of a fire emblem game.

An interesting thing to note is that in the Japanese version of Super Smash Bros. 64, they use actual punching sound effects when you are fighting, unlike the US version where the sound is edited to sound "less violent".
