I'm expecting off ebay some gameboy pockets that were listed as junk. I have never owned let alone fixed one before. What are the most common issues with these consoles?
Also, if I manage to fix them, I plan to bivert mod one of them using a hex inverter chip. So far, I can't find a guide on how to do that. Is it possible to perform this mod?

It is possible, but you really only should bivert it when you combine it with a inverted backlight.
Bivert mod on a pocket is a matter of mixed opinion, however it will not look as crisp as it does on a DMG.

That's the answer I was looking for I'll stick to backlight modding dmgs .
I did a rough Google search for pocket issues. It seems that they can suffer from dry solder joints on the power switch.

I'll keep you posted when I receive the consoles

I seriously would recommend avoiding the Pocket when it comes to backlight mods. Its extremely easy to damage the screen performing the mod.
The bivert mod is easy to do though. theres guides on hand held legend

To illustrate AndehX's point - you'll be peeling the polarizing layer off the lcd screen... (see photo)
When I attempted this - I was able to peel it properly from the top and left sides, then I tore the very flimsy ribbon cable on the bottom of the screen. The cable itself, like the DMG, is not easily repaired or replaced.

I'll likely try it again (as I am a glutton for punishment), but I haven't got the heart to trash another Gameboy Pocket anytime soon.

So the pockets arrived after a long time eventually..
Two pockets power on and seem to be working properly. The third though won't power on, but if I switch it off , I can see some lines moving (like a normal Gameboy does when powered off)
I'll go through them again tomorrow. It's really late now to do any troubleshooting..
