Hey, I was reading this thread, it's an english summary of an interview with someone on the Shadow of the Colossus dev team. I thought I'd post it here, just in case someone is interested. It shows the tools (like LightWave), some screens show how they debug and test, and they explain about techniques used in the engine, as well as how to overcome missing features in the PS2, but it's only a summary, I don't understand it at all, I just like the pics.
