Well you can copy your games from their discs, just put it in the drive and use Dvd2Xbox to copy them in the HDD
or use FTP to transfer them from your computer (you will to FTP anyway to copy Dvd2Xbox on the Xbox)

    What dash are you using?

The IP address of the xbox should be listed in on the home screen or in the settings assuming you've got it plugged into a router with DHCP. For XBMC you just move down to the settings option on the home screen and its shows the IP.
The login and pass should either be xbox/xbox or possibly anonymous. Setting your FTP client to only transfer one file at a time is normally recommended.

From there it should just be a matter of finding how the drive is partitioned and transferring the new games over. For a 160GB drive the games are probably under F or E.
You can really put the games onto any drive that has space, other than X:\ Y:\ and Z:\ which are reserved for caching game data, just need to add the path as a source in your dash.
If you place the new game folders into the same location as the existing ones they should just show up when you reload the dash.

My xboxes (either 400GB PATA drives or 2TB SATA with an adaptor) are:
    C:\ - stock dash
    D:\ - optical
E:\ - XBMC dash and other apps
    F:\ and G:\ - Game image files
