Joystick Advice - Multi Console setup

Once upon a time I dual modded the heck out of a Mad Catz 360 TE (Round 2) to be ps3 + 360 ready. Like the idiot I am I sold that stick at huge loss several years back and now I'm ready to tackle it again.

This time however I want to have a stick that can be compatible with all my older systems via an rj-45 jack and adapters. I am pretty sure my old stick had the chimp and mc cthulhu installed but for the life of me I can't tell what I am looking at now that it is 2014.

Can anyone point me in the right direction? What stick should I start with and what boards would I need to order?

Considerations:
-I have in mind the Saturn SS-0136 (white base, black top) for the color scheme/look but that doesn't necessarily mean I want the actual SS-0136 if I don't need it
-I don't mind spending money for quality but just throwing a ton of money at the project maybe isn't at the top of my list
-PC PS3 and retro consoles are a must however if I can't also have 360 then it's not the end of the world, currently I don't care about ps4/xbone (IE do I start with a 360 base stick or ps3 base??)
-I don't mind soldering the crap out of stuff but would prefer to keep drilling (IE enlarging button holes) to a minimum if possible
-Dear lord the modern mad catz stuff is UGLY
