A custom dash is all you need. UnleashX or XBMC.

Definitely my 2 favorite dashes, have XBMC on most of my modded Xbob's for easy entertainment machines that even someone who is unintelligent with electronics can easily navigate. Great as Movie/TV show boxes!

As for actual apps/programs to run now that you can.... Depends what your interested in.

My personal favorite things to do...

-Beats Of Rage Games A.K.A. OpenBor (An engine that powers side scroller beat em up games that people make for it) (Splatterhouse, Final Fight, Ninja Turtles, Lots of stuff)
    -CoinOps (as mentioned above)
-Various Emulators (Scumm one is pretty well done)
-XMugen (Mugen on Xbox, allowing for crazy amounts of fighting games)
    -StepmaniaX (Dance Dance Revolution Emulator)
-xbomberman (Bomberman Homebrew Effort... Not bad, and still great for Multiplayer)
-Modded Games, Using Trainers (Because who doesn't love to tinker with their favorite games?)

I would link you to a site that has lots of homebrew, but it unfortunately also has tons of full games, so I don't intend to share it on this forum. Google can help you find all you need to know.

Had a ton of good times messing around with the Halo 1 cache editor. We always made the assault rifles shoot rockets and the shotguns shoot tank rounds.

I definitely prefer XBMC, I'm using one of the more recent nightly builds of XBMC4XBOX as default dashboard on my Xboxes, but if you want to play it safe, you might eant to use the latest stable release. The nightly I'm using works flawlessly though. For SD material, it's still one of the best, if not the best, media center around. EvoX is another dashboard that is useful for bios flashing, if you decide to do what they call a "TSOP flash" (I really hate that expression).

Of course you don't have to use XBMC as dashboard, it works just as well as a standalone app. It does however do everything a dashboard need to be able to do, so you can save yourself a few button presses every time you boot your box by using it as the default dashboard :)

Other than that, in my opinion, Xbox is the emulator platform, at least for anything up to the 16 bit era. You should really get a set of emulators.

One of my favourite pieces of homebrew is Super Mario War, a simplistic Smash Bros clone.

Yes, I know you specifically asked for homebrew, but there are also a few commercial games you just have to play if you haven't already: the Knights of the Old Republic series, Ninja Gaiden Black, the Burnout series, SSX 3 and SSX Tricky, Panzer Dragoon Orta, and perhaps the Halo series if FPS on console is your cup of tea.

To get the stuff you need, except for the commercial games of course, make sure you got a FTP client installed, then get onto EFnet, join #xbins, and type !list in the channel. You'll get all further information you need there. I also believe there's an all in one-application for that called Auto Xbins or something like that. I've never used it myself though, so I can't tell you if it's good or give you any help with the usage.

Xbox is definitely the king of emulation. Check out PCSXBox and Surreal64 XXX CE. Excellent fullspeed PS1 and N64 emulation. The controllers are pretty nice for Smash Bros, too. ;)
