I know Demo Kits look like regular 360's but I am wondering if these units could take a Sidecar?

    Yes and no.

Demo Kits are full devkits, however they don't have the connectors for the sidecar on the board.
Basically, if you'd solder it to the board or solder the necessary connectors on the board, it'd work.

This and it has been proven to work by a member here, he soldered a sidecar directly and it worked perfectly, ofcourse you still need the 213w powerbrick.

Question #2: I heard also that Demo Kits could also be either the Test Kit mobo or the Dev Kit mobo. Is there a way to find out from the XDK Launcher?

Heres a pic of the XDK Launcher.
