That's the type of switch you want. ON-ON means that you can switch between two different points, and since you're connecting pin 57 to either 5V or ground that's the switch you need. You could use an ON-OFF switch, but I wouldn't recommend leaving pin 57 unconnected.

I got the switches today and it's working fine! I want to also do a composite mod and for the video I need a 75ohm resistor and a 220uF capacitor. I am not sure which ones to buy tho.

Should I get the resistors marked "1/8w" or "1/4w" and does the voltage on capacitors matter? Thanks!

Fairly sure you can get S-video from the RGB encoders in a Master System, I know you can from the CXA1145 which is in some Master System 1s at least. You should use that instead of composite, or even better use RGB if you have a monitor/TV that will accept that signal :)

It doesn't matter, I would still need the same 220uf cap and 75ohm resistor if I were to do an RGB mod ;)
Do you know which one I should order?

It shouldn't matter on the wattage rating for the resistors, and for the caps you can have the voltage be as low as 6.3V.
