Could you be referring to World Series Baseball from the first volume of the Bootleg Sampler series? That disc's also notable for containing a prototype version of Sega Rally with a few minor differences... The irony is that most - if not all - of the games you mention are far less rare than Sega Screams Vol. 2 itself!

Stuntman on a PS2 demo disc It was a Indiana Jones lookalike, car scene, I played it so many times. Comming a little closer to completing it every day, once I finally beat it, the game had come out, and I bought it. But never managed to complete the last "James Bond" scene in the game
The shareware versions of a ton of games: Doom, Jazz Jackrabbit, One Must Fall 2097, Epic Pinball, Descent, Duke Nukem 3D, Terminal Velocity, Wacky Wheels... I guess they don't technically count as demos, but they were free and limited versions of the games, so I'm saying they count.
This as well! And I had an EIDOS demo disc which I played the shit out of as well, mainly Tomb Raider 1, 2 & 3 demos, and Omikron (the demo was pretty damn good).
I remember the Underground with Ore no ryouri! That game was really cool. I remember being pretty young and not knowing much of what I was doing. There was an Underground shortly after that with a Japanese demo including a guy in what appeared to be a space suit shooting bubbles throughout a village? I've been wanting to play that again for a long time and I've never been able to track it down. Also I remember a Japanese demo similar to the board game Operation where you had to glide a white plasma sword through tiny pathways. I should have taken their names down. I remember playing OMF2097 at school whenever we had a chance. A few of us were getting pretty good at that. They released a new one but idk how well it fared. I put a ton of time into the PS Underground demos, especially Blasto, Thrasher: Skate and Destroy, Grind Session and Metal Gear Solid. Also Tomb Raider III, Tomba!, Tony Hawk Pro Skater, Grind Session and Test Drive 5. Here are a few I remember...
Firebugs, a European-made futuristic racing game for PSX, the demo version on Euro Demo Germany 11/02 - from the official German PlayStation magazine, if I remember correctly. First and only demo that comes to mind, and even though I played it so many times (that one track and one or two vehicles!), to this day I have not actually gotten the full game. Still have the demo CD, tho!
The three I remember playing the most was the demo for FFVII. I purchased Tobal #1 for the demo. The second was the original Metal Gear Solid demo that came with OPM. I played that for hours. The third was the demo for MGS2 that came with Zone of the Enders and played that just as much as I did with the demo of the first game.
Even though I have the full game in my collection, whenever I need a quick Metal Gear Solid 2 fix I still prefer the demo - the best part is on the tanker with Snake, anyway! Who needs Raiden?

That reminds me, the original Metal Gear Solid demo was what got me into the series. I remember the demo ended at the DARPA chief section. I used to replay it all the time, and I'd do things like plant C4, hide on top of it with a cardboard box, and then when an enemy said, "Hm? Just a box!" I'd detonate the C4 and blow him up along with me, haha.
I played a lot of shareware back in the 90' But the first demo game i played a lot was "Zool" on PC. I gotten a demo version on disk from pc gamer i think... At first I played the shit out of the demo level, afterwards i started messing around in the file (think exe) and made some glitched levels To extend game play of course; My love for modding started back then i guess changing random things in notepad opening the exe file and hoping it still would boot after saving; lolz good times now days i use better tools For consoles the Sega demo disc for the Saturn that included Steep Slope Sliders; remember after playing the demo level to quickly press the reboot sequence to start the demo again. That way i could play the game all day (Edit) Christmas Nights also but I never called it a demo for me its more a limited edition version..
I imagine people played the hell out of the Metal Wolf Chaos demo, because the full game is not in America.
When I got my Saturn for my birthday back in '96-97 me and my two cousins played the crap out of the Sega Flash Vol 3 demo that came with it. Tomb Raider and Virtual On especially impressed us, as we had never seen 3D graphics before. It must have taken me months to complete the TR demo, as I didn't get that you could pull/push boxes. I was only 11-12 years at the time, so I didn't have any chance of understanding the instructions (if there were any) in English Virtual On was about the kewlest game ever. The big enormous robots fighting, the excellent and cheerful music, along with the great colorful graphics really took my breath away. I must have played the first Temjin fight at least a hundred times. Primarily holding left or right, while spamming B to dash. I had no idea what I was doing I also thought that the CGI intro that played if you kept it on the press start screen was the most photo realistic thing I had ever seen running on a video game system The Daytona USA CCE demo also included probably got the most play time of them all. Not so much from me, but from my Dad, who never got tired from playing the same thing over and over again. He never did play many games, besides the occasional fighting/driving-game with me, where I pretty much always won. Unless I let him win, so he didn't get too tired of it But this demo of Daytona he eventually played so much, that he became unbeatable and always got the best times. Needless to say we stopped playing that soon after, as I couldn't stand loosing It's funny that I could get so much joy out of a lousy demo-disc. It was the same with the Dreamcast DreamOn vol 1 that was included with the system. Nowadays I hardly ever play demos anymore. The cool thing about a demo back then, was that they were usually released long before the games hit the shelves. It could make me really hyped to play a game in advance. I also didn't have much money back then, so I probably only bought about 10 games a year, and a demo could easily sell me a game, because I knew already what to expect. Not that I have much money these days either, but if I find a game interesting I'll probably buy it eventually. I don't need to spend time playing a demo, especially since I have a lot of unplayed games already on my shelves. Yes me too! I bought my first issue of Official Saturn Magazine with the Sega Flash 7 disc. We also played the shit out of that demo, and I remember thinking that game was amazing
