This may be the rose-tinted nostalgia talking, but I think final bosses were much cooler in the 90s, perhaps the early 2000s.

Super Metroid was probably one of the best collections of bosses ever.

Every boss fight in MGS was awesome, but some of the boss fights in MGS2 were a little bit less so. Still, battling several Metal Gear Rays at once was pretty cool.

All the bosses in ZOE2 were quite accomplished and really gave a sense of fun and urgency. That train scene, or the big ball ("Feel the fury of Zakat, who scorched Mars!"), or the final battle in hyperspace, or the battle against all the bahram armada... pure class.

RPG bosses were quite cool back then, too.
Who can forget the epic battles in Lunar 2, for example?

Many games today don't even have bosses. I mean, like Fallout 3... is Colonel Autumn really considered a "boss"?

The Ace Combat series works pretty well without bosses. (Though one may suggest that the Chandelier, Stonehenge, or that series of tunnels and the white bird in AC5 were like bosses - or the Aigaion in AC6).

I think the best bosses are the robot masters in the Mega Man series, (or the Mavericks on Mega Man X.)

My favorite boss ever is the final boss of Blast Wind.

The music alone makes it one of the most epic things ever.

Outside of that, Shinrei Jusatsushi Taromaru reigns supreme in so far as boss fights for me.

first playthrough of chrono trigger ended in an epic 2 hour boss battle with lavos. do believe it was the first game i ever beat aswell

and on the other end of the spectrum FF XII had an incredibly cool looking but easy final boss. awesome setup, cool design and... not even 10 minutes of battle. whoo
