Easy, Video out to Video In on the PC that has a capture card installed. This is how I test Xbox's that ship to my office.

Do you want good, or great?

I currently have an Intensity Pro. HDMI, composite, s-video, and component compatible, but no support for under 480i, and 480p is over HDMI only (cheap converter does a good job, see my videos). Goes up to 720p60, or 1080p30. Has video passthrough so you dont need a splitter if your computer cant keep up with the live screen. Can stream with it.

I dont like USB cards really

    I just ordered this: http://solarisjapan.com/products/sc-512n1-l-dvi-component-hd-and-dvi-capture-board
Great support for sub 480i, HDMI up to 1080p60. RGB support with an XSync. One of the best that can be bought right now (in this sort of price range).

Note that most capture cards add a lot of delay.

I own a cheap MSI Movie Vox (USB) which only has Composite input and it has the worst quality you'll ever see. There is lots of noise and it will also add about half a second delay which makes it unplayable. So if you want to record you need to use a video splitter so you can connect one cable to the Movie Vox and the other one to the TV.
However, those cheap capture cards are below 5 Euro.

I also bought a Haupauge HD PVR (USB) which accepts a component signal up to 1080i [?] (not sure about frequency). I also have various converters to create the component signal.
The quality is good but sometimes the colors are not perfect due to the internal encoding. Note that this device has an output port which is meant to be used to play without a delay. The video feed from the device which is captured is delayed depending on your buffer size. But a delay of more than 5 seconds is normal due to the encoding.
The HD PVR was 50 Euro (used but in perfect condition), then I spend around 80 Euro for a couple of converters (So I can record VGA, DVI-I, HDMI, Arcade/RGB, S-Video, Component, Composite) - you wouldn't need the converters for the xbox.

A little off topic but I use a happauge HDPVR connected to an Avermedia Game capture HD2 to record composite esily :)
the avermedia is PC free, however I haven't tried to FTP to it yet.
