I have managed to make room for things I didn't think I had room for.

Although I doubt I'll find room for other holy grail. A Ms Pac Man cab.

There's no reason not to get a third Dreamcast. Maybe give it an internal VGA mod and a GDEMU.

Otherwise the original Xbox is a criminally underrated system, or a Neo Geo CD (smaller media than the big boy, and sometimes cheaper, plus it uses the same controllers).

I actually do have 3 Dreamcasts, one has a region mod done on it but displays a black screen when turned on.

Get a Xbox, all you need is a airplane carrier to store it in.

Speaking of Dreamcast, have you considered a Katana dev kit? I err, hear there might be one for sale in the marketplace ;)

The best thing about the PS2 is that every time you think you've seen all of the best games for the system, you see another first class game on youtube (or read about it, or a friend recommends it, etc). No matter how big your PS2 collection grows, you can always find more games worth having.

Genesis, Gamecube/Wii, SNES, and PC Engine are all good choices.

honestly I say go for something that you know you are going to enjoy. Like some of us here at least I can mention ave, we are saturn fans. Also the PC engine is a fantastic choice and the homebrew market is getting big for it too. Now, the X68K and marty are fine choices, but are quite the heavy system to put money on just for the system itself. Some of the games have gotten quite hard and very expensive, but then again everything has over the years. I say feel around to what sort of games you like. Also as to what kind of collector you are as well. All in all, get something you can always come home to and enjoy, and be happy about every purchase you made for said console :)
