I can't say I've ever noticed any lag on my TV, and I run all my consoles, save for the NES, though my SCART to component converter, and it's not even a fancy expensive one.

As to buzz, oddly enough, I've only had that issue with two different consoles. S-video on the N64 (solved by replacing the wire with a better shielded one) and on the SNES (getting a heavily shielded, official cable didn't make a difference). My Mega Drive, Saturn, and Dreamcast all use aftermarket cables, and they're perfect.

I haven't paid much attention to TV lag. I'd be more likely to notice other lag-esque things like framerate issues, emulator timing differences, or unresponsive controllers due to wear.

While I kind of wonder if lag has part in my weak recent Donkey Konga play... I know I'm very out of practice and badly need a platform (knees aren't stable enough). Wouldn't be surprised if the aging bongos are a factor either.
