I had no idea about that one. I'm going to have to pop in my copy of V8:2nd Offense for the DC and give that a go. My dad used to play that game on a daily basis yet he still didn't find that one.
In Hitman Blood Money on the opera house level there's a room in the basement with 3 rats running around. Shoot them and a keycard appears giving you access to Rat Club - a room on the top floor that has rats playing cards and boxing with each other.

There's the hidden F-Zero AX within F-Zero GX, but maybe that's on the same lines as the Goldeneye Spectrum emulator (i.e. not an Easter egg but a hack)

I liked the inclusion of the tracks from Daytona USA 2 and Scud Race in the original Xbox version of Outrun 2. Man, those were sweet bonuses and awesome Easter Eggs if you're a bit of a Sega arcade racing fan like me. I also liked the bit in Metal Gear Solid 4 where you get to play through part of the actual PS1 version of Metal Gear Solid on Shadow Moses island, then Snake wakes up and it was just a sort of flashback/dream. Dunno if this next one really counts as an Easter Egg, but I thought it was great you could choose to play through Afterburner Climax with the soundtrack to the original 1980's version of the game. Tons of cool Easter Eggs in all the Arkham games, too many to mention,
I played it heaps as a kid, it's possibly my favourite game of all time. That and Mario Kart 64 headbutt each other.
