Foreign dudes working as hostesses

    I know that almost all the good Japanese restaurants in my area are staffed by Japanese people, and the owners will post ads on Craigslist asking for Japanese people specifically.
    There also happens to be a massive number of those, albeit they're just sushi restaurants. I don't think you could go 5 blocks without hitting a place for sushi here; I'd go as far as to say they're more common than Starbucks.
    The good ones are all Japanese, and a very small number of them will do the typical Japanese greeting when entering. EVen fewer actually serve Japanese food, with sushi not being the focus.
    The rest are all owned by Chinese, and staffed by a mixture of Chinese, Japanese and Korean. You'll be hard pressed to ever find a white person working there.

    I'd love to go to Japan and sample the attempts at authentic <nationality> food. Here, I don't have a problem finding a place that does good, authentic anything, but I'm sure in Japan, which is more culturally closed, it might be tough to find, say, good Ethiopian.

    Most of the sushi joints in Hawaii were Korean owned. Some were quite good.
