    I haven't had to do the frozen route yet, I have had a look though - it's just as expensive as the "fresh" salmon! So far I've had one piece that had a weird smell, after cooking it came out alright - that risk paid off and I didn't get poisoned! :)

    My fiancee makes a very good Gravelax salmon.
    It's salmon filets prepared with sugar, salt, fresh dill.
    You put one filet in a container, skin under. You cover the meat (flesh ?) with a mix of sugar, salt, pepper, dill ('bout 1 centimeter, don't hesitate), then you cover with the other filet, skin up (so both meats are touching the mix).
    Cover the container with clingfilm, and let it in refrigerator 'bout 3-4 days.
    Every day, turn it upside down, so the one under get over. The mix will "drain" some fluid from salmon and make some kind of sauce that will macerate the salmon meat.
    After the 3-4 days (you can even wait for a week if you like it very macerate), slice it finely. Savor it with fresh bread, a bit of butter or lemon cream.

    If anyone lives in the philly/baltimore/dc area. You gotta try the capital grilles salmon. It's pretty pricey, the two times i went and got drinks with dinner it was around 280 for two people. But dear LERD it was worth it.

    I have a Capital Grille about 10 minutes from the house, but it's impossible to go there and not have steak.

    oh dear lerd i had their kona dry rubbed steak, coffee dried, holy shit hands down best steak i've ever had. so worth it

    Wow! Salmon really is a superfood! For comparison hoki has little to no fats in it - especially the good kind. And the DHA and EPA levels are through the food on hoki. I am not overly impressed with non-salmon fish.

    Not to derail your thread @Shane McRetro but seafood sticks are a pretty choice pick if you're up for a hit of miscellany.
